Paleo Pancake Attempt

Does anything spell “weekend” better than pancakes?

Let me answer that for you – NO.

And since it’s been one of those weeks – an “I need a pancake now!” type of week – I decided to try my hand at a Paleo version this morning.

It reminds me of a crepe… And smells like an omelet. But I kinda liked it. It’s not quite the same as, say these (my fav!) or these, but it’ll get the job done. 😉

Paleo Pancake

Ingredients

  • 1 small banana
  • 2 large eggs
  • syrup (optional)
  • nut butter (optional)

Directions

1. Mash banana in a small bowl. Crack two eggs on top and mix all together (I used a fork, but you could also use a mixer).

2. Heat a small pan over medium heat. Pour banana/egg mixture into pan and cook til golden brown on both sides (flip like with a regular pancake). Serve with syrup or nutbutter on top.

Serves 1

      YES, though I might add flax next time. Just don’t be expecting an IHOP result. 😉
